That all depends on how much you weigh, how many coolers of beer you have on board, how big is the anchor, how many miles on rope is on board and how many pounds of fish you caught. All things considered though you should be able to get 40 plus mph.
My neighbor has exactly the same boat you are describing with me and him on it with a combined weight about 350-360 lbs you’ll get about 35mph out of it.

I passed a guy with a 40 on a 14 foot aluminium yesterday and he was doing around 40 mph but he had the motor trimmed perfectly and I’d say he had a good prop too .
